Base (Crust)
Crush about 10-12 biscuits and power warm melted butter (half cup) to obtain a medium soft base. Take a baking pan and cover it with a baking sheet. Put the biscuit mixture on this and press it to flatten the surface. Now refrigerate it for about 30-40 minutes.
Cheese Filling
- Cream Cheese – 500 grams
- Sugar – little less than 1/2 cup
- Whipped Cream – about 1/4 cup (you can use homemade malai instead)
- 2 tablespoon lemon juice
- 1 tablespoon vanilla essence
Take a big baking bowl and pit your cream cheese and sugar and start blending with a baking blender. Keep adding the whipped cream (malai) 1 spoon at a time while blending. Also, add 2 tablespoon lemon now and keep blending. Add the vanilla essence in the end. This shouldn’t take you more than 15-20 minutes. Blend till the filling becomes creamy. Now put this cream over the biscuit base and let it rest in the refrigerator for 15-18 hours.
Blueberry Dressing
- Sugar Syrup
- Blueberries
Take about 1 pack of blueberries (200 grams) blend half in the blender. Now put some butter in the pan and add the blueberries, keep stirring. Add 3-4 tablespoon of sugar syrup depending on how sour your blueberries are, now take this off the heat (don’t cook for more than 5-7 minutes) Let it cool and now add the remaining blueberries to the sauce as per your liking. Enjoy your homemade cheesecake!
